St Patricks Day Special Eat This Instead: Bison Stuffed Cabbage

Happy St Patrick’s Day! Do you celebrate?

Dan’s family has some Irish in their blood so it’s always been a tradition to do three cheesy St Patty’s Day things:

  3. Eat A Traditional Irish Meal

And while I LOVE cabbage and corn beef, it’s not a meal I like to have so late at night due to it’s heaviness. I’m all for splurging from time to time, but the thought of eating so much sodium and greasy fat right before bed (we don’t eat until around 9:30 during the week), sounds awful.

So, I am using the holiday as a way to continue on with my Eat This Instead series. I’m so glad you guys liked the gnocchi last week! Hopefully you’ll like this equally as much.

What could possibly replace such a wonderful Irish meal? How about stuffed cabbage? How about potatoes?

Bison Stuffed Cabbage

Yes and yes!

This meal, while I knew it would be good, actually blew my expectations. It turned out amazing and Dan and I polished our plates and both agreed that this meal would have to return before next St Patrick’s Day.

What I love most about it is that it looks hard. But it’s not. <— Remember, that’s a requirement! Meals must be easy.

Tip: I used ground bison here, but you can really use any lean ground meat you want. For a vegan option, go with lentils or soaked walnuts.

Bison Stuffed Cabbage

Luck Of The Irish Bison Stuffed Cabbage

Makes 4-5 Servings

Ingredients:
  • Head of Cabbage, leaves pealed off
  • 1 lb Ground Bison (see above for other options)
  • 1 New Potato, Shredded
  • 1 Bell Pepper, Diced
  • 3 Garlic Cloves
  • 1 Small Tomato (vine ripe)
  • 1 Tbsp Mustard
  • 1-2 Tsp Chopped Jalapeno (optional)
  • 1 Can Italian Seasoned Diced Tomatoes

How To Make Stuffed Cabbage

Directions:
  1. Preheat oven to 350-degrees. Bring a large pot of water to a boil.
  2. While water is heating up, mix all ingredients (except cabbage & can of tomatoes) in a bowl until well blended.
  3. Take the cabbage leaves and cut out the large vein at the bottom of each. Once the water is boiling, drop a leaf in and let is boil for 30 seconds, making it easy to roll.
  4. remove the leaf and take 1/3 cup of stuffing and roll up into the leaf. Place in a baking pan.
  5. Continue until all the stuffing is used.
  6. Pour the can of tomatoes on top of stuffed leaves and bake for 25 minutes until meat is cooked to liking (less if you like it medium) We ate ours medium-well.
  7. Serve with favorite potato side dish! We had purple potato hash! Delicious.

Bison Stuffed Cabbage

By using bison instead of corn beef, you’ll cut down your sodium intake SIGNIFICANTLY as well as saturated fat.

A few differences between corned beef and bison?

15 g protein Vs. 21 g protein

83 mg cholesterol Vs. 69 mg

Clearly, the sodium intake is a huge difference! All that salty goodness does not make my body feel fabulous! What about you?

As for calories, two stuffed cabbage leaves has around 215 calories. Enjoy!
