Order Up! Vegan Turtle Bites Made To Order & Weekend Photo Book

Good morning! I hope you had a fabulous weekend, or should I say, having a fabulous weekend!

I tried my best to get on to my computer yesterday to share some pictures of what was going on but it just didn’t happen. Know why?

Because I had my first full order of my Vegan Turtle Energy Bites!

Remember these?

Because I have had so many people tell me they looked awesome but they didn’t have the time to make them, I decided to take matters into my own hands kitchen.

Earlier in the week I offered just 5-orders of my bites and in the day all orders were filled, plus one more (I decided, what’s one more?)! It felt awesome but it also meant spending lots of time in the kitchen. Good thing I love my kitchen!

Here’s what it looked like to make 72 vegan chocolate turtle energy bites!

Each order is filled with a dozen bites (plus 1 for good luck), filled with whole yum goodness! Whole grains, protein, healthy carbs and TONS of flavor. I was proud of myself for making a few extras for us to nibble on, otherwise orders may have come up short on a bite.

I’ll be taking another order this week so if you’re interested send me an email! But I am limiting it to just 5 again for my own sanity at this point.

Running On Empty Full  

It might look like I spent the entire day in the kitchen, but that isn’t entirely true. Thank goodness.

I started the morning off with an awesome 10 mile run. It was a bit warmer and a bit more humid that I had expected but still great. Running along the water as the sun is coming up, always takes my breath away.

About 4 miles into my run I came across the American Heart Association Walk which offered some great reading material along the way… learn something new every day!

By the end, I knocked off about 25 seconds off each mile from my previous long run time!

Then I met up with Dan at a local coffee shop where he was nice enough to share a bagel with me to help refuel my blood sugar! Boy, I needed it! Once I felt better we headed to the market.

No crazy new purchases this time, but we did load up.

Once we made it back to the house that was my que to start in the kitchen. First was a few practice rounds, then the real deal.

I am stoked at how they came out! I made a few “tweaks” from my previous recipe to make it a bit more secret… intrigued? But those tweaks will remain secret.

After turtle time, it was dinner time.

Who Says Vegans Can’t Eat Philly Cheesesteaks?

As soon as I got back to cooking, I opened up this new red wine (that I purchased simply because the label looked awesome) and cooked this up:

It was really good! About this time every year Dan and I switch from drinking whites to more bold reds. It was the perfect pairing for this:

I’ll share the recipe later this week… it was awesome!

The best part was when Dan asked where I got the buns from as I was taking them out of the oven. When I said I had just made them he was shocked! Lol, literally took 20 minutes from prep to the end of baking time.

And no, that isn’t cheese. It’s Daiya… it’s a vegan cheese alternative. Soy free, gluten free, hormone free, preservative free, and perfect melting power!

I wish I could say after dinner we went crazy on the wine, danced our hearts out and partied the night away. But that would be one big fat lie…. I was in bed by 9:30 and it felt amazing.

I woke up for the first time in a long time feeling refreshed and ready for a VERY productive day! Fingers crossed!
