3 Ways To Make Gluten-Free Chocolate Chip Cookies Even Better & Apricot Chocolate Chip Cookie Recipe

This past weekend we had our new neighbors over for a drink and dessert.

As soon as they sat down, I warned them, as I always do…

“Just to warn you, I love to bake. But my baking is a little untraditional… basically I work to make all sweets a little healthier.”

Luckily, they loved my chocolate chip cookies and kept telling us we were going to be great neighbors!

The cookies were gone far too quickly, so I decided Dan and I needed another batch. Because cookies always make you feel better after an emotional weekend.

And we suffered from disappointment all weekend due to the shortened camp trip.

We needed cookies in our lives!

In true Taylor fashion, I couldn’t make the exact same cookies from the day before. I wanted to one up them… so I added dried apricots (see recipe below).

Then that got me thinking…

How else can you take a chocolate chip cookie and make it even better?

3 Ways To Make Chocolate Chip Cookies Even Better

1. Add dried fruit And/Or Nuts

Like I did with the apricots. Dark chocolate and dried fruit pair so perfectly together. They can really help take a cookie from good to outstanding. And if you find yourself sipping on a glass of wine, the fruit can help bring it all together.

Not that I would know about that, though. 😉

Some ideas…

  • Walnuts
  • Banana Chips
  • Dried raspberries
  • Macadamia Nuts
  • Chopped Dates
2. Play with herbs & spices

I always add a splash of cinnamon to my cookies, but that’s not the only option!

  • Try a dash of ginger for some sweet spice
  • Chopped up mint leaves would be awesome! Mint + chocolate? Oh yay!
  • Dried lavender is simply delicious and a perfect way to turn chocolate chip cookies into an elegant tea time snack.

My only suggestion? Make sure to try out just a single spice/herb at a time. Don’t over do the creative touch.

3. Add fresh fruit juice.

I am a huge fan of subtle fruit flavors. I’ve made chocolate chip cookies before by adding fresh orange juice instead of vanilla and they were the bomb.com.

It just takes 1 tablespoon to add that “wow, something is different but awesome here!” result.

If you find that the dough becomes too thinned out, add 1 tbsp extra of whatever flour you’re using.

Other fruity options…

  • Fresh jams or jellies
  • Apple cider
  • Pomegranate juice ← though the color will change

So many fun ways to turn a chocolate chip cookie into a masterpiece. Anyone can make a boring chocolate chip cookie (who am I kidding, there is no such thing) but few people can make an OUT OF THIS WORLD CHOCOLATE CHIP COOKIE!

So let’s get to those Apricot Chocolate Chip Cookies I mentioned.

Basically, you can simply remove the apricots, and use this as your “base” recipe. Then go crazy. Have fun!

Gluten-Free Apricot Chocolate Chip Cookies

Ingredients:

  • ⅓ Cup Almond Butter
  • 3 Tbsp Almond Flour
  • ½ Cup Gluten-Free Baking Flour
  • 1 Egg
  • 1 Egg White
  • 1 Tsp Vanilla Extract
  • 2 Tbsp Coconut Oil or Ghee
  • ¼ Tsp Cinnamon
  • ¼ Tsp Baking Soda
  • 5 Tsp Stevia (powder)
  • ¼ Cup Dark Chocolate Chunks or Chips
  • ¼ Cup Dried Apricots, Chopped

Directions:

  1. Pre-heat oven to 350-degrees.
  2. In a bowl, blend together everything except chocolate chips and apricots.
  3. Once well mixed, fold in apricots and chocolate chips.
  4. Line a cookie sheet with parchment paper (or slightly sprinkle flour on a nonstick baking sheet.
  5. Using an ice cream scoop, make 2 tbsp scoops of dough and place 1-2 inches apart. Batter will make 6-8 cookies.
  6. Bake 8-10 minutes until slightly golden brown on bottom and edges. Allow to cool and dig in!

I have tried lots and lots of gluten-free cookie recipes, and I think this is the best one! The texture is perfect… crunch on the outside, soft on the inside, and the flavor is as it should be. Some gluten-free recipes can leave a “blah” taste due to the flours. Not these.
